So 1970 called, and they want this recipe back. My hunch is Mom got this from the back of a food package or one of those 70's neighborhood cookbooks. Making these is quick, easy, and fun, plus it opens the door to a bunch of possibilities to use different toppings. These are fun to make with kids or your inner kid, and everybody gets they toppings they want, even if it's pineapple and ham.😉
Ingredients:
- English muffins
- Marinara or pizza sauce
- Mozzarella cheese
- Whatever toppings you want
Preparation:
- Get your toppings prepared. Precooked or toppings that work raw (such as pepperoni, olives, already cooked leftover mushrooms, etc.) are ready to go. Things like onions or peppers will work best if you cook them, at least partially, before assembling your pizzas.
- Preheat your oven or toaster oven to 350 degrees.
- Fork-split or cut the desired number of muffins in half and toast. You want them good and crunchy before you add toppings.
- After the muffins are toasted, put them on a foil- or parchment-lined baking sheet. Sauce 'em up. Coat the tops well, but don't over-sauce or your mini pizza will get soggy/drippy.
- Add mozzarella in a thin layer from edge to edge of each muffin half.
- Add your toppings. Resist the urge to over-top.
- Bake for 10-20 minutes until toppings are heated and cheese is melted. Let cool slightly before serving, especially for kids, because pizza burns to the roof of our mouths negates fun.
Cheffy Tip: I usually make these when caught in a wave of nostalgia or laziness about what to cook for dinner. You could get really creative with these or try to class them up a bit, such as using leftover alfredo or béchamel sauce with chopped fresh spinach and leftover chopped broccoli. Have fun, test stuff out, and see what leftovers from the fridge you can transform into piping hot circles of happiness. Enjoy!
